La Madeleine’s is a Austin staple for casual cafe/bristo dining.

They have a killer tomato basil soup that goes very well with colder weather.

I stumbled on a copy cat recipe for this delicious creation.

I made it tonight. Very easy and very close to the real thing… enjoyed it with some lightly toasted slices of fresh french bread and some top shelf Parmigiano Reggiano grated on top.

Cost me about 1/4 what it would have cost at the restaurant and I have a couple jarfuls left over for tomorrow. Yummy.
